Yummy Salad!Can a salad really be this easy to make?  Really?

That’s what I was asking myself as I compiled the ingredients for my lunch salad today.  I’ve always imagined making a salad as being a very time consuming, arduous tasks.  At least that’s how it looked from my view on the couch.  But today, I made the simplest yet, yummiest salad I could have asked for!  And it was SO easy!

Here’s what I did.  And I’m warning you, this is the EASY way to make salad, not the cheapest (although it’s not like I broke the bank). 

Romaine LettuceLettuce:     I bought some pre-washed romaine lettuce leaves.  Everyone has their own favorite lettuce, right?  So pick your favorite type of lettuce and buy the pre-washed version.  (Check out the photo to see the brand I got.)  Grab the cutting board and chop up the lettuce.  Romaine is so easy to chop (chop it length-wise for perfect bite-sized pieces of lettuce).  I love it.

Zucchini:    I bought one zucchini and sliced up the entire thing (that would be once length-wise and then slices after that to get cute little half-slices).  Okay, pop those suckers in a zip-lock baggy so they are ready for your next salad.

Carrots:    You guessed it!  Pre-washed and pre-shredded ready to eat carrots.  Done.

Tomatoes:    I love a good tomato but I can never find healthy looking cherry tomatoes… so I splurged.  I purchased these gorgeous organic cherry tomatoes that were still on the vine.  And they are something… so yummy!  (Not pre-washed so I just pull a few off the vine and rinse them.)

Cheese:    Everyone knows you can buy pre-shredded cheese now.  Get your favorite to sprinkle on your salad!  I bought a new mix of colby and Wisconsin cheddar, which has a little bit of bacon in it too.  YUM!  But don’t go overboard.  Just a sprinkle.

Dressing:    A drizzle of your dressing of choice.  Mine is the fat free blue cheese.  Just enough to add a hint of flavor.

How long does it take to put this salad together?  It was quicker than typing up this post!  Seriously, about 5-8 minutes and it tastes great.  This can also be made ahead of time and saved for later in a tupperware container.  Bon apetit!

sounds like a great (easy) way to fix salad… I’d probably throw some beans or hard-boiled eggs in and make it a complete meal with protein! :-)

Hey, they also make that chicken in a can… you can rinse it off to get rid of most of the salt… but I’d probably choose black beans or chickpeas… still easy!

Great suggestions Betsy! Chicken from a can would be a great way to make it a meal. I had been thinking of making extra chicken breasts the night before and using them the next day in my salad. But from a can is great for when I don’t do that. I suppose even tuna could be used.
